We are pleased to launch Yearling Beef. We wanted to find a creative product that would fit the niche market for VEAL but was very clearly different – this is produced from an older animal and has been raised using our conventional organic beef system.

 

In order to produce milk, a cow has to calve, however Brewhamfield only needs a small percentage of replacement Jersey’s each year and have pioneered with the Aberdeen Angus / Jersey cross, producing Brewhamfield Mature Beef.

 

Most veal is produced from calves that are predominantly milk fed, killed at around 5 or 6 months and are raised in barns.

 

Yearling Beef is different. It is produced from older animals – around a year old, they have milk for 3 months and are then allowed either roughage or grass. During the winter they are kept in small groups in large airy sheds with deep straw beds, and during the summer are allowed out to pasture to graze.

 

The meat is hung for around 10 days and is available in the cuts shown below. The meat is slightly darker in colour than veal, but it still has very little fat and is unbelievably tender. However the most important bit - flavour - our yearling beef has a delicate beef flavour that we think puts it in a class of its own. A classic summer meat.
